With a ground floor, first floor and loft we originally thought that we might use the loft as additional living space (like bedrooms).

However, the cost of putting in dormer windows or even raising the roof by half a metre to make more liveable space was too prohibitive.  And so we decided just to make good the inside of the loft area, install double glazed windows in the traditional air spaces (that had been left open) and just board the floor in the loft space so that it could be used for storage at some point, if needed.
